Enodav Wine Company was founded in 2018, drawing its inspiration from the concept of balance. In the context of winemaking, there is a pursuit to strike the delicate balance between the influence of the vineyard and the hand of the winemaker, forming a harmony that can be savored with each sip from the wine glass. This balance has been studied, debated, and sought after by winemakers since antiquity, and has yet to achieve a consensus. It has long been said that wine is made in the vineyard, but there are grape varieties that are decidedly prone to reflecting the hand of the winemaker. Each side of this metaphorical scale carries weight and influence, but when harmoniously combined, a result is achieved that is greater than the sum of the parts. There is a symbiosis, a mutually beneficial relationship, between the vineyard and the maker, between nature and human influence.
